The importance of Terroir: the Moscato Bianco variety is prefectly reflects the characteristics of the landscape of the municipality of Castiglione Tinella, where most of the Paolo Saracco vineyards are located.
"The Terroir is really what decides how our Moscato will be" - in his own words, Paolo Saracco summarises how important the subsoil is for growing grapes. The land is made up of layers of sand, silt (grey clay) and limestone (crumbling shells), and therefore is ideal for enhancing the aroma of Moscato d'Asti. The secret of this wine is the subsoil where roots draw up the minerals they need which, combined with the microclimate, altitude and sunlight, make all the difference.

THE VINEYARDS

A real winemaker knows identify plots of land in the best areas. Over the years the Paolo Saracco company has bought vineyards in the areas around Castiglione Tinella, Santo Stefano Belbo, Castagnole Lanze and Calosso. On their 50 hectares grapes are grown sustainably in harmony with nature and with attention to changes to the climate throughout the year. Moscato grapes are full of aroma: all processing steps in the winery are done to maintain and preserve the flavour.
